Chicken breasts are packed with protein, vitamins, and minerals. When stuffed with your favorite cheeses, wrapped in bacon, and served with a couple sides, you can have a nutritious dense meal that is both delicious and filling. A good appetizer is half cabbage/half spinach salad, topped with walnuts, berries, and a favorite vinaigrette. Serve with steamed broccoli

Prep:
• Place one oven tray on an upper level closer to the broiler, and another in the center.
• Preheat oven to 400º
• Remove fully defrosted chicken from fridge 30 minutes before cooking

Ingredients:
• 3 large chicken breasts
• 6-9 strips of low-fat bacon
• 1/2 cup shredded parmesan
• 1/2 cup mozzarella
• 1/2 cup cream cheese
• 4 tbsp olive oil
• 4 tsp salt
• 3 tsp pepper
• 2 tsp rosemary

Directions:

First, place all cheese ingredients in a bowl and mix. Then, mix olive oil and spices, and whisk with a fork. Once done, butterfly each chicken breast, coat with olive oil/spice mix, and stuff with cheese. Close and wrap each breast in 2-3 strips of bacon.

Place on baking sheet that is coated with a light layer of olive oil. For an added bonus you can bake the chicken with small cuts of broccoli florets and diced potatoes. Of course with added seasoning to ensure enough coverage.

Bake for ~30 minutes on middle tray. Remove and turn broiler on high.

Warning! Because of the high heat during this next step, be sure to stand a little back and to the side when opening. Additionally do not walk away, as you can quickly burn the dish if you go over time.

Once broiler is on high, insert baking tray again for 1-1/2 to 2 minutes on top rack. Then, turn broiler off, remove tray, and allow to cool for a few minutes before serving.
